I’m Ian Fish, in 2021 we started the process of distilling our own Gin
ROCKCHAPEL DRY GIN
The idea of Rockchapel Dry Gin originated during the pandemic when we were making sloe and rhubarb gin for our Shoot here in Rockchapel. We saw an opening for a high-end gin at a cost-effective price. We wanted to make a dry gin to be distributed to hotels, pubs, restaurants and the retail sector. We wanted pubs, restaurants and hotels to be able to offer their customers a high – quality gin at a competitive price enabling them to display it on the optics rather than on a shelf.
HOW WE CAME UP WITH NAME
We live in Rockchapel, a beautiful village located in North Cork right on the borders of the three counties of Cork, Kerry and Limerick. The name Rockchapel originated from the penal times when Catholic religious services were banned. Mass was said on a rock in a remote area, also the hawthorn tree was widely used as a disguise for mass rocks all over Ireland hence the haw berry in our gin.
As a consequence, some local botanicals are used to enhance our product in delivering its unique taste profile.
The Gin’s main botanicals include the Haw Berry, Apple, Wild Rose and Elderflower, this highlights the Juniper and Coriander in the product.
